Kale and Roasted Sweet Potato

This is a fantastic winter dish but delicious year-round. The bitterness of the kale is balanced by the sweetness of the sweet potato. I also like the combination of a leafy green, which grows towards the sun, with a root vegetable which grows underground. Energetically this dish is both energizing and grounding. Bon appetit!

French Lentil Salad

This is a recipe I learned from mom in France when I was a child. In my family and generally in France, this salad is served with lukewarm lentils. So good!! I always add 3 TBSP of sauerkraut on the side. It goes so well with the flavor of the Dijon mustard dressing. Legumes are so good for you and the #1 food to help fight heart disease! So be sure to eat your beans and lentils regularly.

Blending the flavors from Italy with regions like Mexico and Ethiopia, we get amazing flavors and textures to spice up your dinner routine. Teff is a grain from Ethiopia and it packs quite a nutritional punch when compared to other grains like wheat or rice. Naturally gluten-free, teff is high in amino acids, higher in fiber than wheat (5g compared to 1g), and a very good source iron and calcium. At 20-40% resistant starch it is very good for your digestive system and a delicious way to get more fiber into your diet. Something most Americans are lacking. Very small compared to most grains making it much quicker to cook.

Mung Bean Stew with Poblanos and Tomatillos

Mung beans are from India but we bring a Mexican flare for a unique dish. Just 1 cup of mung beans has 14g of protein and 15g of fiber. A good source of magnesium and folate but what makes these beans stand out is how easy they are to digest. Of all the beans in the world, mung beans are the easiest to digest which is why in India, kichadi (a dish with equal parts split mung beans and white rice) is considered baby food and is a key food in Ayurveda for its healing qualities. Be sure to soak your mung beans overnight to reduce cooking time and make them even easier to digest.
