Four Ingredient Vegan Pancakes

My 3-ingredient pancakes become a 4-ingredient affair in the Fall and Winter as I add flax seeds to the mix. I also add more nutrients in the form of superfood powder for diversity and nutrition. I eat 5-7 pancakes for breakfast. I make a double batch on the weekend and take them to work for 3-4 days.

For the dish

  • 1 TBSP ground flax seeds
  • 1 large ripe banana (sweeter)
  • 1 cup GF oats
  • 1 1/2 cup nut milk
  • OPTION: add 1 TBSP of your favorite green powder, or 1 tsp matcha, or 1 tsp spirulina


Preparing the Dish


Blend in a power blender into a batter. Let sit for 5 min while you heat the non-stick pan to medium high heat.

Use a 1/4 cup to measure the batter to cook. Poor batter into pan, spaced out so they don’t touch. Cook under medium heat. Flip when underside is browning.
