Crunchy Green Beans with Ginger Lemon and Almonds
The perfect healthy side dish.
Ingredients
- 2 cups French beans green beans
- 1-2 garlic cloves finely minced
- 1 tsp of lemon rind
- 1 inch ginger root grated
- 2 tbsp slivered raw almonds
- 1 or 2 TBSP lemon juice
- 1 tbsp extra virgin olive oil
- a little sea salt for the boiling water
Instructions
- Boil the beans in salty water until crisp-tender about 5 min.
- Meanwhile saute the garlic in the olive oil.
- Transfer the beans to the pan and rapidly stir in the lemon rind, grated ginger root.
- Add the lemon juice and then transfer to a plate.
- Sprinkle the slivered almonds and serve warm.
