Crunchy Green Beans with Ginger Lemon and Almonds

Ingredients
  

  • 2 cups French beans green beans
  • 1-2 garlic cloves finely minced
  • 1 tsp of lemon rind
  • 1 inch ginger root grated
  • 2 tbsp slivered raw almonds
  • 1 or 2 TBSP lemon juice
  • 1 tbsp extra virgin olive oil
  • a little sea salt for the boiling water

Instructions
 

  • Boil the beans in salty water until crisp-tender about 5 min.
  • Meanwhile saute the garlic in the olive oil.
  • Transfer the beans to the pan and rapidly stir in the lemon rind, grated ginger root.
  • Add the lemon juice and then transfer to a plate.
  • Sprinkle the slivered almonds and serve warm.
