Crunchy Green Beans with Ginger, Lemon and Almonds

2 cups French beans (green beans)

1-2 garlic cloves, finely minced

1 TSP of lemon rind

1 inch ginger root grated

2 TBSP slivered raw almonds

1 or 2 TBSP. lemon juice

1 TBSP. extra virgin olive oil

a little sea salt for the boiling water


Boil the beans in salty water until crisp-tender about 5 min. Meanwhile saute the garlic in the olive oil. Transfer the beans to the pan and rapidly stir in the lemon rind, grated ginger root. Add the lemon juice. Transfer to a plate. Sprinkle the slivered almonds and serve warm.
