Arame Salad

Japanese Arame Salad is a tasty way to incorporate the nutrition power of seaweed into your diet. Using fresh vegetables, arame seaweed and topped with a delicious lemon, garlic and sesame oil dressing, this salad will not disappoint!

Ingredients
  

For the salad:

  • 1 small shallot
  • 1 large organic cucumber
  • ½ red pepper julienne
  • 1 ½ TSP arame seaweed

For the dressing:

  • 1 clove garlic pressed
  • 2 TBSP. lemon juice
  • 2 TSP. toasted sesame oil
  • sea salt to taste

Instructions
 

  • Soak the arame in cold water and let it sit for 15 min. Drain and rinse.
  • Thinly slice the cucumbers. Transfer the slices to a serving bowl and add the julienned pepper in the serving bowl.
  • Stir all of the remaining ingredients in the serving bowl and mix with your hands, until well incorporated.
  • For the dressing combine all ingredients and mix well. Pour over finished salad the desired quantity.
