Sesame Bok Choy
Bok Choy is a nutritional powerhouse and is in the top 3 on Aggregate Nutrient Density Index. This cruciferous vegetable from Asia is a great source of calcium, Vit. K, selenium, iron, Vit C, potassium and folate. It is delicious and highly anti-inflammatory.

- 1 lbs bok choy or baby bok choy halved
- 2 tsp sesame oil
- 1 tbsp tahini butter
- 2 tbsp Braggs aminos soy sauce or tamari
- ½ inch grated fresh ginger
- 1 tbsp sesame seeds
Arrange a steamer basket in a large pot. Add enough water just to reach bottom of basket and bring to a boil.
Add bok choy and reduce heat to medium low to steam for about 6-10 minutes or until bok choy is tender.
In a large bowl, whisk together tahini butter, sesame oil and Braggs Aminos (or soy sauce/tamari) and ginger. Add bok choy and toss to coat.
Garnish with sesame seeds. Like spicy? Add crushed chili flakes, pepper or any seasoning you wish!
