Fig Cardamom Overnight Oats
This Fall breakfast is perfect to go and provides stable and grounding energy, featuring warming oats and cardamom powder, the sweet comfort of figs and vanilla and, on colder days, add a bit of fresh ginger to it (or warm it up with a little bit of ginger tea from your thermos). You can also top it with your favorite seasonal fruit such as pomegranate, apples and pears or slices of a navel orange.

- ⅓ cup gluten-free organic rolled oats
- 2 TBSP ground chia and flax seeds combined
- 2 dried unsulfured figs
- ¼ tsp ground cardamom
- ¼ tsp vanilla extract
- ½ cup unsweetened coconut or almond milk
Combine all the ingredients in the mason jar, adding the nut milk last. With a spoon, stir to combine. Seal and let the mixture soak at room temperature for the flavors to blend in and keep it in the fridge overnight.
