BANANA POMEGRANATE NICE CREAM WITH CHOCOLATE COULIS

Ingredients
  

Nice Cream Ingredients

  • 1 frozen banana
  • ½ cup pomegranate seeds or, 1 frozen pitaya/dragon fruit pack (or frozen blueberries)
  • A splash of almond or coconut milk or water for consistency
  • Spices: cardamom, cinnamon, or ginger

Optional Chocolate Coulis Ingredients

  • 2 tbsp raw cacao butter
  • 2 tbsp raw cacao powder or more, depending on consistency
  • Spices of your choice: vanilla bean cayenne, ginger and even essential oils such as peppermint for instance

Optional Healthy Toppings

  • raw cacao nibs
  • toasted coconut shavings

Instructions
 

  • Blend the Nice Cream ingredients in a high power blender until creamy. Reserve in the freezer in your presentation dish. Melt the cacao butter using the double boiler method. Remove from the heat and whisk the cacao powder with the melted butter and add any spices/aromatics. Pour on top of the Nice Cream and add any toppings of your choice
