Quinoa Guacamole

Ingredients

1 cup quinoa

1¾ cups water

½ tsp sea salt

1 tbsp olive oil

Juice of 2 limes

3 tbsp cilantro

½ red pepper, chopped

½ cup chopped red onion

½ cup chopped avocado

Directions

Soak quinoa in water 1hour if you have the time (optional). Wash, rinse and drain thoroughly to remove saponin ( a natural pesticide). Place quinoa in a 2-qt pot (or rice cooker), add water and salt. Bring to a boil, lower heat and simmer with lid on until all water is absorbed (about 15 minutes). Don’t stir the grain while it is cooking. Test for doneness by tilting the pan to one side, making sure all of the water has been absorbed. Remove lid and let rest 5 to 10 minutes.Combine olive oil, lime juice and cilantro in a large bowl. Add red pepper, red onion and avocado and toss. Add cooked warm quinoa. Toss well. Serve warm or at room temperature.
