Creamy Millet and Amaranth

- 1 cup millet

- 1/2 cup amaranth

- 3 1/2 to 4 cups of water

- 1 tsp. sea salt


  • Serve with a spoon of flaxseed oil on top for a buttery flavor. Top with cooked vegetables or greens and any dressing.
  • Add a teaspoon or cinnamon and 1/4 cup raisins during cooking for a sweet treat!
  • Add chunks of parsnip or carrot during cooking for extra sweetness.
  • Add almonds or other nuts or seeds during cooking for richness and crunch.


Rinse millet in a grain strainer

Put all ingredients in a pot and boil

Turn heat down and simmer for about 35 minutes stiffing frequently. When the grains are soft and creamy, it's ready!
